
Saturday morning breakfast used to be such a staple in my home. During the week we were all about rushing and getting everyone where they needed to go. We hardly ever had the time to just sit down and enjoy a home cooked breakfast. I spent my Saturday mornings cleaning and that wasn’t a tradition that I wanted to pass down to my kids. I wanted them to use the weekends to reset for the upcoming week and for a while we did that. Now the teenager has a job and the boys have their activities and we are running just as much as the weekdays.
My daughter is in love with all things french toast. This is one of our favorite Saturday morning breakfast options. It’s also a great way to get rid of some of those berries that might be on their last leg in your refrigerator. If you get a lazy Saturday then this is a great recipe to make for just you and a boo or the whole family!

Ingredients
- 8oz Cream Cheese (softened)
- 1/3 Cup powdered sugar (plus a little extra for dusting)
- 2 eggs
- 1c heavy cream or half&alf
- 1Tsp Vanilla extract
- 2Tsp Cinnamon Spice Sugar
- 1 Brioche loaf (10-12 slices)
Instructions
Ok first you want to mix together the cream cheese, powdered sugar and vanilla extract until it is smooth and cream, kinda like frosting. I like to use a hand or stand mixer because it makes it really smooth but you can just use a hand whisk. Then you want to spread a good amount onto one slice of the brioche bread and then put another piece on top, making a sandwich.
Now it’s time to make your egg batter, mix together the eggs, milk heavy cream, and sugar. I have given measurements but the best way I can describe the taste is that it should taste like ice cream. A really good hack is to substitute sweet cream coffee creamer for the cream. Also the method of coating the bread is important, you don’t want to submerge the bread as much as you want to dip it. You want it coated but not smothered, this ensures that you won’t have soggy french toast.
Now grab a medium heated pan (I prefer cast iron) and spray it with some pan spray or a light coating of butter. Then you want to cook each side until its golden brown, about 2-3 minutes on each side.
To plate you can cut each piece in half diagonally and stack them like the picture I have above, drop a few berries on top and then add some whipped cream. Dust the extra powdered sugar with a sifter and you’re done!
