Yes you have to add the extra E’s, there is no other way. If you don’t then it’s just ‘The Best Guac” and that’s not enough to describe this recipe.

Honestly I was introduced to this style of guacamole from one of my favorite restaurants in Birmingham, Al. Babalu’s is no longer with us but may their guac recipe live on in the hearts of everyone that ever visited. I don’t know if this is the exact recipe and I have tweaked it to my liking even more over the years. The guac was made tableside so I just always watched how it was made and then just tried to recreate it at home.
It has some unusual ingredients but they work sooo well together. Now that I have had it I can’t go back to the regular recipes. They just aren’t enough for me and I’m ok with needing things be a little bit extra.

Can we talk about how Cinco De Mayo is on Taco Tuesday and WE CAN’T GO ANYWHERE??? Like what is up with that?? It’s a cruel trick on us. I like to tell myself that the restaurants wouldn’t have been able to handle the demands of the people. It’s better that we celebrate at home and not in the streets.
Our family decided to do several items Queso Dip, Elotes, Carne Asada Street Tacos, Pico De Gallo, and of course Guacamole. I even had a few margaritas! My daughter helped in the kitchen and it was just a really good day! Not too many melt downs and just easy, you know?
Anyway, Let’s get into this Guac. I know that’s the only reason why you’re here.
THEEE BEST GUACAMOLE

Ingredients:
4 medium-large Avocados
3 Strips of crispy bacon
1/4c red onion, small diced
½ Lime, squeezed
3tbs chopped cilantro
3 tbs of minced sundried tomatoes
3 Garlic cloves, minced
Salt & Pepper to taste
Diced jalapeno, optional
Directions:
- Remove the pits from your avocados and mash them to your liking,
- Add your other ingredients and mix together well
