You can make almost any dish into soup if you’re lazy enough. Trust me… I’m lazy enough.
Because food is always on my mind, I’m usually thinking about what I want to eat tomorrow tonight. I make it a habit to pull whatever meat I may need from the freezer so its thawed by the time that I want to use it. I pulled ground beef out 3 days ago. I ended up making something completely different and once you thaw frozen meat you can’t re-freeze it so its just been sitting.
All of my ground beef recipes would require me to have to go to the store for some missing ingredients. It’s kinda cold and dreary here so not at all the climate I want to drag a newborn out in if not necessary. Finally I realize that I have everything that I would need to make lasagna… except the energy.
Look, Lasagna is a labor of love and I just ain’t got it in me today. My cup is empty, fill me Lord. I’ve been dodging baby pee and wiping poop. I. Just. Cannot!
Lasagna soup is a lazy persons dream come true. You literally throw all the ingredients in a pot and just let it cook. Lasagna is kinda messy anyway so it works perfectly. This also takes less than 30 min… another win if you ask me!
1/2lb of lean ground beef
1/2 cup of diced onion
1/2lb of italian sausage
4-5 garlic cloves
1 28oz can crushed tomato
few basil leaves
2 cups of chicken broth
1tbsp salt, oregano, pepper
1 bay leaf
6-7 lasagna noodles broken into bite size pieces
1/4 cup of heavy cream
Cheese topping: Mix well
1/2 c of sour cream
1/2 cup of ricotta cheese
1c of mozzarella cheese (shredded)
garlic salt – 1 tsp
Heat large Dutch oven/large soup pot over medium high heat. Add beef, italian sausage and onion and cook, stirring occasionally until beef is browned. Add garlic and saute for 30 seconds. Drain off any excess fat.
Add all other ingredients. Bring to a boil then reduce to a simmer until lasagna noodles are tender, stirring occasionally (approximately 20-30 minutes).
Discard bay leaf and stir in heavy cream (optional) and more chicken broth if needed to reach desired consistency. Garnish individual servings with desired amount of cheeses.
There are so many deconstructed soup recipes out there that you should give this and them a try. Save it for your laziest of days tho… you’ll thank me later.
