I always get questions on how or what I meal prep for the hubby so I’ll just drop it here so I can just point everybody in this direction. We usually do sheet pan meals because they are so easy, and right now I need all the easy meals I can get. He’s on a no carb kick right now but we usually just stick to protein/starch/veggies. He’s not real picky on what he doesn’t eat so we just rotate with what’s in season and what looks good.
It is the beginning of November and officially cinnamon and sweet potato season. So I thought I would put something together to celebrate the beginning of holiday season.
So basically I combined all the following items on a sheet pan:
2 cups Brussel Sprouts, trimmed and cut in half
2 medium sweet potatoes, peeled and chopped
2 apples, chopped
1 medium yellow onion, chopped
I seasoned everything with about 1tsp each of garlic, salt, pepper, & cinnamon.
I also mixed equal parts that came to about 1/4 cup of a garlic olive oil and peach white balsamic vinegar, if you don’t have those flavors you can just use regular balsamic vinegar and regular olive oil.
Spread it out on a sheet pan and cook at 350 for about 30 minutes or until the sweet potatoes are fork tender. We added some chicken and meal prep is done for the next week.
This looks absolutely amazing! Will definitely add this to my healthy meal prep!
